Veggies! Veggies! Veggies!

Second meal in the Home Chef box is a roasted vegetable tartine with a side of brussel sprouts.

The bag - challenge accepted:


Chopped veggies ready for roasting. Since the temperature was still cool today, I wanted to make sure to make this today so I wouldn't be battling the apartment heat. I only used half the onion since onion doesn't always agree with me. I also added a few chopped mushrooms since I had them on hand


Mischief managed! This was delish. The "baguette" was more of a sub roll but it toasted nicely enough. Also, I think the aioli on the tartine was overwhelmed by the tartness of the goat cheese. For the leftovers, I'm going to swap it up and toss the heated brussels in the leftover aioli and drizzle the sweet basalmic over the tartine.
