Various bits of brain fluff

How nuts is this? At home, I usually have to have a window open despite frigid weather because the apartment complex keeps the heat cranked. However, it got so cold that even that couldn't keep up so I had to supplement with a space heater. However here at work tgu I had to ask my coworker help me prop open the window out in the hall so I can manage to get my office under 80F. I hope that the nagging cough I have isn't spurred by this ping pong temperature business. Fortunately my buddy Julie down the hall had one of those big mints like you get at a restaurant that should keep the urge to cough somewhat at bay.

Updating on a few things:

- I don't know if it's the CBD oil or the food I have JuneBug on, but her poo issues have improved. She does have bad days - sometimes pretty yucky - but it's far better than it was. So I'll keep her on the regimen. Yesterday I was sent an offer for 30% off CBD oil I'm currently using so I stocked up because that stuff isn't cheap

- Vegan eating is going just fine. The only time I felt any sort of urge to cheat is when I didn't eat a decent breakfast and we were walking through the seafood section at Wegmans. LOL. If you follow me on IG or wander by there, I've been posting regular pics to keep me in check. Some of the things that I'd like to adjust are these:
     - Wanting to try and hopefully like different textures of tofu. I've not strayed past the baked or extra firm variety and I'd like to try out soft tofu in a stew or congee. I am kind of confused, though, because even though I've watched some YT stuff and read stuff, I don't get why things exist such as "extra firm silken tofu." Isn't that an oxymoron?
     - Trying the tempeh I have in my fridge. When I've experimented with vegan week, that stuff made me gassy and I'm already gassy. But I figure why not give it another go?
     - Eventually eating less processed food. I'm sure I'd actually lose weight if I could do that better.

- Work is still insane and last week I had another disagreement with Business Moron. He is so completely dense that he attached on an email to Bossman, copying me, a conversation from USDA that confirmed MY stance that we're NOT supposed to be setting up accounts to pre-spend federal money we haven't been awarded. What frustrates me is how it's so blatant, yet Bossman still gives this dipshit the benefit of the doubt. Once the goverment opens back up, I do hope we get audited. I swear that's the only way we can get rid of this dope is to get in trouble for mismanagement of funds.

Speaking of the den of insanity, time to get back to it. If I don't get pulled into another work argument with these dopes (this includes Bossman, BM, and the jerk of a woman that runs our School's business office and the University's grants accounting office who is trying to stay out of things but really needs to grow a backbone)

That would never fly with TBG. He's not a tofu fan. I struggle with our one meatless meal a week because of it...

I used to be a huge tofu avoider and then I tried some of the meat substitutes that are breaded like the Trader Joe's fake chicken strips and the Gardein fake chicken sliders and realized that they taste startlingly close to the real thing.

The next thing that won me over is smoked tofu since the taste is SO good

I don't know what the mental block is when it comes to tofu. I think the somewhat rubbery texture may be part of the issue? Hence why I'm wondering if I might actually like softer or silken tofu better

He's just not a fan and we have eaten a lot of it in our time. He puts on a brave face, but I hear about it afterwards.

Ah, the wide, wonderful world of tofu. It does get confusing. I just use whatever the recipe calls for.

I'm glad Junie's poo issues are getting better. Poor lil' bug.

I guess I use the firm stuff the most. Its perfect for tofu scramble or as a mock ricotta. I haven't experimented with it in a while and there's probably lots in the US that I can't get here.

Side note - I am in love with the Kite Hill ricotta substitute - it is so close to the real deal! In fact I'm digging that brand all around.

Probably depends on where in the US. I'm betting in my old hometown in Ohio, people probably look at you confused when you ask for tofu of any kind.

I'm hoping to get to H-Mart (big Korean grocery chain) on Sunday to check out their selection. Asian food markets seem to have many more of the options.

Ricotta substitute? Wow, might be tempted to make lasagne again if I didn't have to do all that mashing of tofu.

I gotta check out a few hippie stores in NY.
